Libby's Fears Canned Pumpkin Shortage This Thanksgiving

First there was the Halloween pumpkin shortage and now this.

Nestlé, the parent company of Libby's Pumpkin, said Tuesday that it might not have enough canned pumpkin for the Thanksgiving holiday.

"Our calculations indicate that we may deplete our inventory of canned Libby's pumpkin as we approach the Thanksgiving holiday," Paul Bakus, vice president for Nestlé's baking division, told the New York Times.

Happy National Pickle Day!

Happy National Pickle Day! Though most commonly perceived and popularized as a brined cucumber, the "Food Lover's Companion" defines the pickle as any "food that has been preserved in a seasoned brine or vinegar mixture." According to the guide, the most popular pickling subjects beyond the cucumber typically include pearl onions, cauliflower, watermelon rind, baby corn, herring and pig's feet -- though most any vegetable can be pickled, it need only be firm enough to not dissolve in brine.

Brines range from sweet (Bread-and-Butter Pickles), to sour or hot (Spicy Dill Pickles), or may take on the flavor of whatever additives, from herbs to spices (Rosemary-Garlic Pickles). And the brine itself holds a range of uses too: soup stock, drink base, even hangover remedy! In one of the more surprising uses, a shot of pickle juice follows a shot of Jameson in the "pickle back" drink.

Indian Pudding -- With and Without Fruit

Kathleen Wall, the colonial foodways culinarian at Plimoth Plantation in Plymouth, Mass., understands not everyone wants fruit in their Indian pudding: She just wishes the detractors could find more civilized ways of expressing their distaste.

"I've had people stand in front of me and spit the fruit into their hands," Wall says. "People who are nice and rational."

Rational about all things, apparently, but Indian pudding, the centuries-old sweet dish that's so beloved it has its own holiday: Today is National Indian Pudding Day, an annual celebration of what Plimoth Plantation's Web site calls one of the nation's "ugliest, yet great tasting, bi-cultural culinary treats."

Its name notwithstanding, Indian pudding isn't a Native American specialty. "It's called Indian because of the cornmeal," Wall explains. Other ingredients include milk and molasses, a byproduct of the thriving 19th century sugar trade. While a recipe for Indian pudding didn't appear in print until 1796, references to the mushy snack appeared as early as 1740.

Romanesco - Feast Your Eyes

No, you're not looking at an enchanted forest on a planet made of Play-Doh, you're looking at broccoli. Sort of. It's Romanesco, a fractal vegetable from the broccoli family. It's sometimes called Romanesco broccoli and perhaps better known as the Broccoflower, as it's often mistaken for a broccoli-cauliflower hybrid (which, as we understand, does exist and looks a lot like Romanesco).

We have to admit though, we're not too concerned with its classification -- what we really want to know is how it tastes sautéed with butter and sea salt.

Brent Ridge and Josh Kilmer-Purcell are the farmers and innovators behind Beekman 1802, a 200-year-old estate and farm in upstate New York. We'll be running recipes, photos and tales from the farm as their crops come into season. Catch them on the Farm to Table episode of 'Rachael's Vacation' on the Food Network.


We had a bounty crop of carrots this year. We sliced them and diced them every which way we knew how and still they kept coming. It seems like you can open almost any refrigerator in America and find a neglected bag of carrots. You use one or two in a salad and then get stumped as to what to do with the rest.

We turned to our friend Sandy Gluck who always helps us out with our overstock. The result is a sweet and spicy carrot dish that will definitely clear up crisper space in refrigerators across the nation.

Few of us want to make a complicated lasagna for solo dining -- by day six, you'll never want to see lasagna again! In this series, AOL Food staffer Sarah LeTrent taste-tests simple recipes suitable for a "table for one."

When we think of peanuts, we think Virginia, ballgames and a top hat-wearing, cane-holding, monocled mascot. However, peanuts are also a staple in West African cooking and used prominently in many dishes. One such typical meal is a hearty stew made with tomatoes, sweet potatoes and peanuts.

This vegetarian version of the soup relies on the saltiness and creaminess of peanut butter -- the pantry staple and venerated American spread that is an often unsung hero in meals that don't include jelly or two slices of bread.

Presenting a new (and more acceptable) way to eat peanut butter by the spoonful.
